Southern Baked Corn Recipe

Serves 1

Ingredients:

  • 2 cups corn, cooked
  • 3 tbsp butter
  • 1 tbsp onion, chopped
  • 1 tbsp green pepper
  • 1/2 tsp salt
  • 3/4 cup milk
  • 3 eggs, separated
  • 1/2 tsp vinegar
  • 1 tsp salt
  • 1/2 tsp pepper
  • 4 tbsp bread crumbs


Instructions:

1. Melt butter in skillet and brown onion and green pepper.
2. Add flour and gradually stir in milk.
3. Stir until thick and smooth.
4. Add egg yolks, corn, vinegar, salt and pepper.
5. Fold in egg whites.
6. Top with bread crumbs.
7. Bake at 400 F for 20 to 30 minutes.
