Pico De Gallo Corn Recipe
Serves 1 Ingredients: 1 1/2 cups corn kernels
2 tomatoes, cut into 1/4-inch dice
1/4 cup diced red onion
1 1/2 jalapenos, seeded and minced
1 tbsp chopped cilantro
Juice of 2 limes
1 tbsp olive oil
Salt
Instructions: 1. Combine vegetables, jalapenos, cilantro and lime juice.
2. Heat olive oil in a skillet and add vegetable mixture.
3. Cook just until corn softens.
4. Season to taste with salt.
