Pico De Gallo Corn Recipe

Serves 1


  • 1 1/2 cups corn kernels
  • 2 tomatoes, cut into 1/4-inch dice
  • 1/4 cup diced red onion
  • 1 1/2 jalapenos, seeded and minced
  • 1 tbsp chopped cilantro
  • Juice of 2 limes
  • 1 tbsp olive oil
  • Salt


1. Combine vegetables, jalapenos, cilantro and lime juice.
2. Heat olive oil in a skillet and add vegetable mixture.
3. Cook just until corn softens.
4. Season to taste with salt.
