Monterey Corn Recipe

Serves 4


  • 1 medium green pepper, chopped
  • 3 tbsp margarine
  • 1/8 tsp black pepper (1/4 tsp if like hotter)
  • 1 bag (1 lb) frozen whole kernel corn, or 1 (1 lb) can corn, drained
  • 1 small onion, chopped (1/4 c)
  • 1 tsp salt (less if using canned corn)
  • 3 tbsp water (water off corn if using canned corn)


1. Saute green pepper and onion in margarine in skillet until tender.
2. Stir in corn, salt, pepper and water; cover and cook over low heat, stirring 1 or 2 times until corn is done.
