Livingston Manor Cornmeal and Bacon Pancakes Recipe

Serves 4


  • 1/3 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 2 tsp baking powder
  • 1 egg
  • 1 1/4 cup milk
  • 1 tbsp bacon fat, melted
  • 2 strips bacon, cooked and, crumbled


1. Mix cornmeal, flour, salt and baking powder.
2. In a separate bowl, beat the egg.
3. Add milk and then bacon fat.
4. Stir this mixture slowly into the dry ingredients, mixing well.
5. The batter should be fairly thin; add more milk if necessary.
6. Mix in crumbled bacon.
7. Cook pancakes in a skillet or on a griddle.
