Kansas Corn Scallop Recipe

Ingredients:

  • 1 can whole kernel corn
  • 1 can cream-style corn
  • 2 eggs
  • 2/3 cup evaporated milk
  • 1/4 cup corn liquid (whole kernel)
  • 1/2 stick margarine
  • 2 tbsp instant minced onion
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 cups crackers, crushed
  • 12 oz diced Velveeta or Swiss cheese


  • Instructions:

    1. Drain whole kernel corn, reserving 1/4 cup corn liquid.
    2. Beat eggs slightly in a large bowl.
    3. Stir in corn and 1/4 cup of liquid.
    4. Add cream-style corn, evaporated milk, melted butter, onion, salt and pepper.
    5. Fold in saltines and diced cheese.
    6. Spoon into greased 8-cup baking dish.
    7. Bake at 325 F for 1 hour.
    8. Let stand for 5 minutes before serving.
