Kansas Corn Scallop Recipe
Serves 1
Vegetables
Ingredients: 1 can whole kernel corn
1 can cream-style corn
2 eggs
2/3 cup evaporated milk
1/4 cup corn liquid (whole kernel)
1/2 stick margarine
2 tbsp instant minced onion
1/2 tsp salt
1/4 tsp pepper
2 cups crackers, crushed
12 oz diced Velveeta or Swiss cheese
Instructions: 1. Drain whole kernel corn, reserving 1/4 cup corn liquid.
2. Beat eggs slightly in a large bowl.
3. Stir in corn and 1/4 cup of liquid.
4. Add cream-style corn, evaporated milk, melted butter, onion, salt and pepper.
5. Fold in saltines and diced cheese.
6. Spoon into greased 8-cup baking dish.
7. Bake at 325 F for 1 hour.
8. Let stand for 5 minutes before serving.
