Harvest Corn Recipe

Serves 4

Ingredients:

  • 1 20-oz bag frozen corn
  • 1 small sweet onion, cut into eighths
  • 1 cup chopped sweet red pepper
  • 1 tsp cornstarch
  • 1/2 tsp salt
  • 1/8 tsp cayenne pepper
  • 1/8 tsp black pepper



  • Instructions:

    1. Microwave frozen corn for 7 minutes on high speed.
    2. Mix in a small bowl the corn, vegetables, and spices together thoroughly.
    3. Spread in a single layer on dehydrator trays.
    4. Dry until crisp, 10 to 12 hours.
    5. Store in an airtight container.
    6. To cook, cover corn with boiling water and soak for 1/2 hour.
    7. Cook on low heat for 20 to 30 minutes or until corn is soft enough to eat.
