Diabetic Cornmeal Muffins Recipe

Makes 6 muffins

Ingredients:

  • 4 ounces melted butter
  • 4 tsp Sweet'n'Low sweetener (brown)
  • 6 ounces cornmeal
  • Pinch salt
  • 3 eggs
  • 14 ounces milk
  • 4 ounces filbert flour
  • 10 ounces all-purpose flour
  • 1 1/2 tbsp baking powder


  • Instructions:

    1. Add the flour and baking powder to the other well-blended ingredients.
    2. Portion into well greased pans.
    3. 425 F for 20 minutes or less.
