Diabetic Cornmeal Muffins Recipe
Makes 6 muffins Ingredients: 4 ounces melted butter
4 tsp Sweet'n'Low sweetener (brown)
6 ounces cornmeal
Pinch salt
3 eggs
14 ounces milk
4 ounces filbert flour
10 ounces all-purpose flour
1 1/2 tbsp baking powder
Instructions: 1. Add the flour and baking powder to the other well-blended ingredients.
2. Portion into well greased pans.
3. 425 F for 20 minutes or less.
