Cranberry Cornmeal Muffins Recipe

Makes 12 muffins

Per serving: 103 calories; less than one gram fat (3% calories from fat); 3g protein; 22g carbohydrate; 1mg cholesterol; 88mg sodium

Ingredients:

  • 1 cup unbleached flour
  • 3/4 cup cornmeal
  • 1/3 cup granulated sugar
  • 2 tsps baking powder
  • 1 egg white, whipped
  • 3/4 cup buttermilk, or 3/4 cup milk combined with 2 tsp vinegar
  • 1/4 cup fat-free sour cream
  • 1/2 tsp lemon peel, grated
  • 1 cup cranberries, chopped



  • Instructions:

    1. Preheat oven to 350F.
    2. Prepare 12 muffin pans with cooking spray and flour; set aside.
    3. In a mixing bowl, combine flour, cornmeal, 1/3 cup sugar, and baking powder.
    4. In another mixing bowl, combine egg white, buttermilk, sour cream, lemon peel, and cranberries.
    5. Use an ice cream scoop to fill muffin tins 2/3 full.
    6. Bake for 20 minutes or until golden.
