Cornmeal Waffles Recipe

Makes 6 to 8 waffles

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup yellow corn meal
  • 2 eggs (separated)
  • 3 tsp baking powder
  • 1 1/2 to 1 3/4 cups milk
  • 2 tbsp sugar
  • 6 tbsp liquid shortening (oil)
  • 1 tsp salt


Instructions:

1. Mix and sift dry ingredients.
2. Add egg yolks, milk and shortening.
3. Fold in stiffly beaten egg whites.
4. Bake in waffle iron until done.
