Corn Muffins with Honey Butter Recipe

Makes 18 to 24 muffins

Ingredients:

  • 2 cups flour
  • 2 cups cornmeal
  • 1 cup carnation dry milk powder
  • 1/4 cup sugar
  • 2 tbsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 2 2/3 cups water
  • 1/2 cup margarine, melted
  • 2 beaten eggs
  • 1 tbsp lemon juice
  • Honey Butter:
  • 2 tbsp honey
  • 1/2 cup softened butter (no substitutes)


Instructions:

1. In a bowl, combine flour, cornmeal, milk powder, sugar, baking powder, salt and baking soda.
2. Add water, butter, eggs and lemon juice; stir until dry ingredients are moi stened.
3. Spoon into 24 greased muffin cups or 18 if you are using the large sized tins.
4. Bake at 425 degrees for 13 to 15 minutes.
5. In a small mixing bowl, beat together honey and softened butter.
6. Serve with the muffins.
