Corn Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1/4 cup shortening
  • 1/4 cup white sugar
  • 2 tbsp cornstarch
  • 2 tbsp vinegar
  • 1 tsp salt
  • 1 1/2 cup flour
  • 1 cup cornmeal
  • 1 cup water


Instructions:

1. Cream the shortening and sugar.
2. Add the cornstarch, vinegar and salt.
3. Alternately beat in the remaining ingredients, mixing well.
4. Spoon into a well oiled muffin tin.
5. Bake at 400F for 20 minutes or until golden.
