Confetti Corn Recipe

Serves 4


  • 1 tbsp olive oil
  • 3 cups frozen corn kernels
  • 1/2 cup diced red bell pepper
  • 3/4 tsp chili powder
  • 3 scallions, thinly sliced
  • 1/4 tsp salt


1. Heat oil in a large skillet over medium heat.
2. Add corn, bell pepper and chili powder.
3. Increase heat to medium-high and cook, stirring often, until corn is hot, about 2 minutes.
4. Stir in scallions and salt; cook for 1 minute.
