Cold Green Summer Soup Recipe

Serves 6 to 8

Ingredients:

  • 5 cups chicken stock
  • 2 cups chopped fresh green beans
  • 2 cups chopped fresh romaine
  • 2 cups chopped fresh zucchini
  • 2 cups fresh peas or 1 box frozen unthawed peas
  • 1 cup chopped celery
  • 1/2 cup chopped scallions
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • Garnish:
  • Chopped fresh parsley


  • Instructions:

    1. In saucepan, combine all ingredients except salt, pepper and parsley.
    2. Simmer vegetables, partially covered, for 15 to 20 minutes or until tender.
    3. Process in blender, 1 cup at a time until smooth.
    4. Season with salt and pepper.
    5. Chill thoroughly and garnish with chopped parsley.
