Cold Green Summer Soup Recipe
Serves 6 to 8 Ingredients: 5 cups chicken stock
2 cups chopped fresh green beans
2 cups chopped fresh romaine
2 cups chopped fresh zucchini
2 cups fresh peas or 1 box frozen unthawed peas
1 cup chopped celery
1/2 cup chopped scallions
1/4 cup chopped fresh parsley
Salt and pepper to taste
Garnish:
Chopped fresh parsley
Instructions: 1. In saucepan, combine all ingredients except salt, pepper and parsley.
2. Simmer vegetables, partially covered, for 15 to 20 minutes or until tender.
3. Process in blender, 1 cup at a time until smooth.
4. Season with salt and pepper.
5. Chill thoroughly and garnish with chopped parsley.
