Hummus with Tomato Relish Recipe

Serves 6

Ingredients:

  • 16 cans chickpeas
  • 1 lemon
  • 1 clove garlic
  • 1/2 tsp tahini
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1 onion
  • 1 tomato
  • 1 cup coarsely chopped parsley


  • Instructions:

    1. Squeeze the juice from the lemon.
    2. Mince the garlic, puree the chickpeas, and reserved liquid, lemon juice, garlic, tahini, oil and salt in a food processor until very smooth.
    3. Chop the onion and tomato and toss with the parsley.
    4. Put the hummus on a plate and arrange the relish next to it.
    5. Drizzle the hummus with additional olive oil.
