Grapefruit Carrot Cocktail Recipe

Makes 5 cups

Ingredients:

  • 3 medium carrots, coarsely chopped
  • 4 cups grapefruit juice, fresh
  • 1 1/2 tbsp grenadine
  • Ginger, ground
  • 1 1/2 cups crushed ice


  • Instructions:

    1. Cooke carrots in a small amount of water until tender. Drain and reserve 1/4 cup of cooking liquid.
    2. In a blender, puree the carrots with the reserved liquid for a few seconds.
    3. Add the grapefruit juice, grenadine, a pinch of ground ginger and the crushed ice and blend until frothy.
    4. Serve immediately.
