Dilled Zucchini and Carrot Salad Recipe

Serves 5

Ingredients:

  • 1/3 cup salad oil
  • 1/2 cup lemon juice
  • 1 1/2 tsp salt
  • 1 1/2 tsp onion powder
  • 1 tsp dill weed
  • 1/4 tsp ground black pepper
  • 4 cup (3 med) zucchini, sliced
  • 1 1/4 cup shredded carrots, (2 med)
  • 1/2 cup sliced ripe olives
  • 1/3 cup chopped pimiento


  • Instructions:

    1. In a small covered jar, combine oil, lemon juice, salt, onion powder, dill weed and black pepper.
    2. Cover and shake well.
    3. In a large bowl, combine zucchini, carrots, olives and pimiento; toss gently.
    4. Pour about 1/4 cup dressing for futu reuse.
