Carrot Salad Recipe

Serves 4

Ingredients:

  • 4 medium carrots, shredded
  • 1 tbsp chopped fresh parsley
  • 1 tbsp basil
  • 1 tbsp scallions
  • 3 tbsp lemon juice
  • 2 tbsp safflower oil
  • Salt and pepper


Instructions:

1. Combine all ingredients in a mixing bowl, toss and serve.
