Carrot Raisin Salad Recipe
Serves 3 to 4

Ingredients: 2 tbsp raisins
1 tbsp cider vinegar
1 cup carrots , coarsely shredded
1/2 cup pineapple chunks in juice, drained, chopped finely
2 tbsp pineapple juice, unsweetened
Dash ground cinnamon
Dash ground nutmeg
Instructions: 1. Combine raisins and vinegar in a medium bowl; let stand 15 min Add carrot and pineapple tidbits; stir well.
2. Combine pineapple juice, cinnamon, and nutmeg; pour over carrot mixture, and toss well.
3. Cover and chill.
