Carrot Raisin Salad Recipe

Serves 3 to 4

  • 2 tbsp raisins
  • 1 tbsp cider vinegar
  • 1 cup carrots , coarsely shredded
  • 1/2 cup pineapple chunks in juice, drained, chopped finely
  • 2 tbsp pineapple juice, unsweetened
  • Dash ground cinnamon
  • Dash ground nutmeg


1. Combine raisins and vinegar in a medium bowl; let stand 15 min Add carrot and pineapple tidbits; stir well.
2. Combine pineapple juice, cinnamon, and nutmeg; pour over carrot mixture, and toss well.
3. Cover and chill.
