Carrot Muffins Recipe
Makes 36 muffins Ingredients: 1 1/2 cups white sugar
1 1/4 cups corn oil
3 eggs
3 cups flour
2 tsp baking powder
1 1/2 tsp baking soda
1/4 tsp salt
2 tsp cinnamon
2 cups grated carrots
Instructions: 1. Preheat oven to 345 F.
2. Cream sugar and oil, add eggs one at a time, beat well after each addition.
3. Add dry ingredients and mix well.
4. Stir in carrots, pour into prepared pans and bake for 20 to 25 minutes or until center springs back when touched.
