Carrot Muffins Recipe
Makes 24 muffins Ingredients: 4 carrots, grated
1 1/2 cups milk
1/4 cup orange juice
2 eggs, beaten
2 cups flour
2 cups cornmeal
3 tsp baking powder
3 tbsp sugar
1 tsp salt
4 tbsp butter, melted
Instructions: 1. Preheat oven to 325 F.
2. In large bowl combine carrots, milk, orange juice and eggs.
3. In separate bowl sift together the flour, cornmeal, baking powder, sugar and salt.
4. Slowly stir the flour mixture into the carrot mixture.
5. Add melted butter.
6. Pour into greased muffin tins and bake for 25 to 30 minutes.
