Carrot Cake Superior Recipe
Serves 8 to 10 Ingredients: 2 cups flour
1 1/2 tsp baking soda
2 tsp cinnamon
2 cups sugar
1 1/2 cups corn oil
4 eggs
2 cups finely grated carrots
1 cup crushed pineapple, drained
1 cup coconut
1 cup chopped walnuts
1/2 cup toasted wheat germ
1 tsp vanilla
Frosting:
4 oz cream cheese, at room temperature
1/2 lb powdered sugar
1 tsp vanilla
4 tbsp butter or margarine
Instructions: 1. Preheat oven to 350 degrees.
2. Sift together flour, baking soda, and cinnamon and set aside.
3. Beat sugar, vegetable oil, and eggs with mixer until well blended. Gradually add flour mixture.
4. Fold in carrots, pineapple, coconut, walnuts, wheat germ and vanilla.
5. Pour butter into greased and floured bun pan, tube pan, or 9x12-inch pan.
6. Bake for 45 minutes or 1 hour, testing after 45 minutes.
7. Cool completely.
8. For frosting, combine all ingredients and mix well.
9. Frost cooled cake.
