Carrot Cake Muffin Treats Recipe
Makes 32 muffins Ingredients: 1 1/2 cups whole wheat flour
1 tsp baking soda
1 tbsp baking powder
2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1 egg
7 oz crushed pineapple, canned, not drained
1/4 cup raisins
1/4 cup chopped walnuts
1/3 cup and 2 tbsp 1% low-fat milk
1 1/2 cups grated carrots, or 1/2 cup dried, rehydrated
Instructions: 1. Rehydrate dried carrots.
2. Combine the dry ingredients in a bowl.
3. Add the remaining ingredients and stir to blend.
4. Spoon into oiled muffin tins or paper muffin cups.
5. Bake at 350 F for 15 minutes.
