Carrot Bran Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1 1/2 cups flour
  • 2 eggs
  • 1 1/2 tsp baking powder
  • 2/3 cup dark brown sugar, packed
  • 1/2 tsp baking soda
  • 1/2 cup vegetable oil
  • 1 tsp cinnamon
  • 1 1/2 cups finely grated carrots
  • 1/4 tsp salt
  • 1 cup buttermilk
  • 1 1/4 cups bran
  • 1 tsp vanilla
  • 1/2 cup currants
  • 12 date halves


  • Instructions:

    1. Preheat oven to 350 F.
    2. Sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and in a large bowl beat eggs lightly; add brown sugar, vegetable oil, carrots.
    3. Bake for 25 to 30 minutes until muffins pull away from sides of the pan.
