Cabbage and Dumpling Soup Recipe

Serves 6

Ingredients:

  • 1/4 lb firm tofu
  • 4 tbsp water
  • 1 cup whole wheat flour
  • 1/8 tsp black pepper
  • 1/4 tsp salt
  • 1/2 medium head cabbage
  • 1 tbsp corn oil
  • 8 cup boiling water
  • 1 bay leaf
  • 1 tbsp soy sauce
  • Chopped scallions


  • Instructions:

    Dumplings:
    1. Blend tofu with water till smooth.
    2. Sift dry ingredients.
    3. Stir in tofu mixture.
    4. Knead for 1 minute, form into 1/2" balls and set aside.
    Soup:
    5. Mince core of cabbage and shred leaves finely.
    6. Heat oil in soup pot.
    7. Add cabbage and saute over medium heat til golden.
    8. Add water and bay leaf.
    9. Return to a boil, add dumplings, cover and simmer for 15 to 20 minutes.
    10. The dumplings should be floating on the top at this point.
    11. Remove bay leaf.
    12. Dilute soy sauce in a bit of the broth, add to the soup.
    13. Simmer for another 5 minutes.
    14. Serve, garnishing with scallions.
