White Bean Soup Recipe
Serves 2 Ingredients: 2 tsp olive oil or vegetable oil
1/2 cup each diced carrot and celery
1/4 cup finely diced onion
1 clove garlic minced
1 1/2 cups water
1/2 cup tomato sauce
1/4 tsp each basil leaves and salt
1/8 tsp each thyme and pepper
4 oz drained canned small white beans
2 tsp chopped fresh parsley
Instructions: 1. In 1 1/2 or 2-quart saucepan heat oil; add carrot, celery, onion and garlic and saute until vegetables are tender.
2. Stir in water, tomato sauce, and seasonings and bring mixture to a boil.
3. Reduce heat and let simmer for 15 minutes.
4. Stir in beans and cook until throughly heated, about 5 minutes longer.
5. Serve each portion sprinkled with 1 teaspoon parsely.
