White Bean Salad Recipe
Serves 8 to 10 Ingredients: 1 lb (2 cups) dried small white pea beans1 medium onion4 or 5 whole cloves2 tsp salt1/2 cup olive oil1/4 cup lemon juice2 cloves garlic, minced4 green onions, finely chopped1/4 cup minced fresh parsley1/4 cup (or more) minced fresh dill Salt and freshly ground pepper to taste
Instructions: 1. Soak beans in water overnight, or boil 2 minutes and then soak 1 hour. 2. Stud onion with cloves and add more water, if necessary, to cover. 3. Add 2 teaspoons salt. 4. Bring to boil, cover, and simmer 1 1/2 to 2 hours, until tender. 5. Drain well and cool. 6. Mix with remaining ingredients. Refrigerate at least 3 hours. 7. Sprinkle with additional dill, if you wish, before serving.
