Taco Salad Recipe

Serves 4

Ingredients:

  • 1 large can ranch style beans, drained
  • 1 head lettuce, shredded
  • 1 can kernel corn, drained
  • 3 medium tomatoes, cut bite-sized pcs
  • 1 bunch green onions
  • 1/2 lb mild Cheddar cheese, grated
  • 1 6 oz pkg corn chips


  • Instructions:

    1. Drain beans and corn.
    2. Shred lettuce.
    3. Slice tomatoes into bite size pieces.
    4. Chop onion.
    5. Grate cheese and chill the first 6 items.
    6. Just before serving, add crumbled corn chips and top with 1 bottle of Catalina dressing.
    7. I also add 1 lb of ground round to this recipe which makes it even better.
    8. In lieu of the bottle of Catalina dressing, you can add some thick, spicy salsa plus approximately 1/4th cup of Catalina dressing to taste.
