Robust Broccoli-Bean Soup Recipe

Serves 6 to 8

Ingredients:

  • 2 onions, chopped
  • 2 clove garlic, chopped
  • 2 tbsp olive oil
  • 6 cups italian stewed tomatoes
  • 2 tsp oregano
  • 2 tsp rosemary
  • 2 cans white beans, rinsed
  • 20 oz frozen chopped broccoli
  • 2/3 cup Parmesan
  • Ham or pasta


  • Instructions:

    1. Saute onion and garlic in oil in soup pot.
    2. Add tomatoes and spices; simmer 5-10 mins.
    3. Add beans and broccoli; bring to boil; reduce heat, simmer 5 mins.
    4. Add Parmesan just before serving.
    5. Serve with garlic bread
