Robust Broccoli-Bean Soup Recipe
Serves 6 to 8 Ingredients: 2 onions, chopped
2 clove garlic, chopped
2 tbsp olive oil
6 cups italian stewed tomatoes
2 tsp oregano
2 tsp rosemary
2 cans white beans, rinsed
20 oz frozen chopped broccoli
2/3 cup Parmesan
Ham or pasta
Instructions: 1. Saute onion and garlic in oil in soup pot.
2. Add tomatoes and spices; simmer 5-10 mins.
3. Add beans and broccoli; bring to boil; reduce heat, simmer 5 mins.
4. Add Parmesan just before serving.
5. Serve with garlic bread
