Macaroni and Bean Soup Recipe
Serves 4 to 6 Ingredients: 1 carrot chopped
2 tbsp olive oil
2 cup small white beans (navy), soaked overnight with 1 tbsp baking soda in 1 qt water
2 cloves garlic chopped
1 large onion chopped
1 celery stalk chopped
1 tbsp flour
2 13 oz can beef broth
1 8 ounce can tomato sauce
6 to 8 cups water
1/4 lb ditalini macaroni
2 slices salt pork or bacon, diced
Grated cheese for serving
Instructions: 1. Here's another soup that can feed an army and be a complete meal with bread and salad.
2. Soak beans overnight.
3. Drain and rinse beans well.
4. Place oil in large pot and sautee salt pork.
5. Add all veggies and sautee until translucent.
6. Add flour and stir well.
7. Add beans, broth, water and tomato sauce.
8. Bring to boil and then simmer for 2 hours.
9. When beans are soft, taste for salt and pepper.
10. Add pasta and simmer until pasta is tender.
11. Serve with cheese on the side for topping.
