Lentil Soup Recipe
Serves 6 Ingredients: 1 qt chicken stock
1 qt water
1 lb dried lentils, washed and picked over
2 medium potatoes, peeled and diced
2 medium onion(s), diced
2 large tomatoes, peeled, seeded and quartered
2 large carrots, peeled and diced
3 garlic clove(s), minced
1 tsp dried oregano
1/2 tsp pepper
1/2 cup olive oil
Salt to taste
Instructions: 1. In a large pot, bring chicken stock and water to a boil.
2. Add all the other ingredients at once.
3. Bring to a boil; continue boiling for 15 minutes.
4. Then simmer over low heat for hour and it's done.
