Garlic Bean Soup Recipe

Serves 6

Ingredients:

  • 2 cups vegetable broth
  • 8 garlic cloves, peeled
  • 1 onion, chopped
  • 4 cups white beans, cooked


  • Instructions:

    1. Put broth, garlic, and onion in large bowl; cover.
    2. Microwave for 20 minutes or until vegetables are soft.
    3. Transfer to a blender or food processor, add half the beans and puree.
    4. Return soup to bowl.
    5. Add remaining beans and microwave 5 minutes or until beans are heated through.
