Basil-Red Pepper Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1 cup skim milk
  • 1/3 cup olive oil
  • 2 egg whites or 1/4 cup cholesterol-free egg product
  • 2 cups all-purpose flour
  • 1/3 cup chopped red bell pepper
  • 1/4 cup chopped green onions, with tops
  • 2 tbsp chopped fresh or 1 tsp dried basil
  • 1 tbsp sugar
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1/8 tsp pepper


Instructions:

1. Heat oven to 400 F.
2. Spray 12 medium muffin cups, 2 1/2 x 1 1/4 inches, with nonstick cooking spray.
3. Beat milk, oil and egg whites in largebowl, using fork.
4. Stir in remaining ingredients just until flouris moistened.
5. Divide batter among muffin cups.
6. Bake for 18 to 20 minutes or until golden brown.
7. Immediately remove muffins from pan.
