Pastina-stuffed Avocados Recipe
Serves 4 Ingredients: 2 ripe but firm avocados
1/2 tsp saffron threads
1 cup (6 oz) pastina
2 cups chicken stock
2 fresh tomatoes, skinned, seeded and chopped
2 tbsp diced onion
1/4 cup fresh parsley, chopped
2 green onions, sliced into thin rounds
Salt and pepper
1/2 cup vinaigrette
Instructions: 1. Heat 1/4 cup of chicken stock and steep threads for 20 minutes.
2. Cook pastina in chicken stock with diced onion and steeped saffron.
3. When cooked, drain and mix well with remaining ingredients.
4. Stuff avocado halves.
