Cold Avocado Soup a la Sylvia Recipe

Serves 2

Ingredients:

  • 2 tbsp onions, chopped
  • 2 garlic cloves, crushed
  • 1/2 tomatoes
  • 1 tsp olive oil
  • 1 cup avocado pulp
  • 1/2 tbsp lemon juice
  • 4 ds chili powder
  • 2 tbsp mayonnaise
  • 1/2 cup stock
  • 1/2 cup cream, heavy


  • Instructions:

    1. Saute onions and garlic in olive oil just until tender.
    2. Peel, seed, and finely chop tomato.
    3. Add to onions and cook a few seconds.
    4. Blend all ingredients and chill for 4-6 hours.
    5. Serve in bowls or cups and top with a twist of lemon or lime peel.
