Cold Avocado Soup a la Sylvia Recipe
Serves 2 Ingredients: 2 tbsp onions, chopped
2 garlic cloves, crushed
1/2 tomatoes
1 tsp olive oil
1 cup avocado pulp
1/2 tbsp lemon juice
4 ds chili powder
2 tbsp mayonnaise
1/2 cup stock
1/2 cup cream, heavy
Instructions: 1. Saute onions and garlic in olive oil just until tender.
2. Peel, seed, and finely chop tomato.
3. Add to onions and cook a few seconds.
4. Blend all ingredients and chill for 4-6 hours.
5. Serve in bowls or cups and top with a twist of lemon or lime peel.
