Avocado Curry Soup Recipe

Serves 4

Ingredients:

  • 2 avocados, peeled and cubed
  • 2 1/2 cups chicken stock
  • 1 tsp curry powder
  • Salt, to taste
  • White pepper to taste
  • 1/2 cup whipping cream


  • Instructions:

    1. Blend the avocados with 1 cup of the chicken stock in a food processor until smooth.
    2. Stir in the remaining stock and the remaining ingredients.
    3. Chill.
    4. Garnish with sliced or cubed avocados when ready to serve.
