Avocado Curry Soup Recipe
Serves 4 Ingredients: 2 avocados, peeled and cubed
2 1/2 cups chicken stock
1 tsp curry powder
Salt, to taste
White pepper to taste
1/2 cup whipping cream
Instructions: 1. Blend the avocados with 1 cup of the chicken stock in a food processor until smooth.
2. Stir in the remaining stock and the remaining ingredients.
3. Chill.
4. Garnish with sliced or cubed avocados when ready to serve.
