Avacado Soup with Green Peppercorns Recipe

Serves 4

Ingredients:

  • 1 medium onion, diced
  • 1 tbsp ground coriander
  • 1 tbsp olive oil
  • 4 large ripe avocados, peeled, pitted and coaresly chopped
  • 1/3 cup green peppercorns in brine, drained
  • Salt to taste
  • Pepper to taste
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 2 1/2 qt light chicken stock
  • Cilantro leaves for garnish


Instructions:

1. In large saucepan, cook the onion, garlic and spices in the olive oil over moderate heat for 10 minutes, stirring often.
2. Add avacados and stock, bring to a boil, then reduce heat to medium.
3. Cook 20 minutes.
4. Cool to room temperature.
5. Puree soup in blender until smooth.
6. Return to pan, bring to a boil, add peppercorns, reduce to moderate heat and cook 10 minutes.
7. Serve garnished with cilantro and peppercorns.
