Asparagus Soup Recipe

Serves 4

Ingredients:

  • 2 lb (1 vegetable) asparagus, sliced diagonally
  • Beef or chicken bouillion cube
  • 3 leeks, sliced
  • 1 cup cream
  • 4 green onion, sliced thinly
  • 2 tbsp tarragon
  • 1 red potato, chopped small
  • 2 tbsp basil
  • 3 tbsp butter
  • 1 clove garlic, pressed
  • 4 cup water
  • 1 tbsp soy sauce


  • Instructions:

    1. Saute vegetables in butter for 5 minutes.
    2. Add water and bouillon cube; Simmer 5 minutes.
    3. Add remaining ingredients and simmer 10 minutes more.
    4. Serve.
