Jerusalem Artichoke Soup Recipe

Serves 4

Ingredients:

  • 2 lb jerusalem artichokes
  • 6 cup chicken broth
  • 1 cup thinly sliced green onions
  • Salt/pepper to taste
  • 2 tsp minced fresh dill


  • Instructions:

    1. Scrub Jerusalem artichokes and cook in simmering water 30-40 minutes, until tender.
    2. Drain and discard cooking liquid.
    3. Peel and mash artichokes and place in a large saucepan.
    4. Stir in chicken broth and green onions.
    5. Simmer for about 15 minutes; season to taste with salt/pepper and serve sprinkled with dill.
