Jerusalem Artichoke Soup Recipe
Serves 4 Ingredients: 2 lb jerusalem artichokes
6 cup chicken broth
1 cup thinly sliced green onions
Salt/pepper to taste
2 tsp minced fresh dill
Instructions: 1. Scrub Jerusalem artichokes and cook in simmering water 30-40 minutes, until tender.
2. Drain and discard cooking liquid.
3. Peel and mash artichokes and place in a large saucepan.
4. Stir in chicken broth and green onions.
5. Simmer for about 15 minutes; season to taste with salt/pepper and serve sprinkled with dill.
