Tempeh Salad Recipe
Serves 4 Ingredients: 1 tbsp olive oil
2 tbsp tamari
1 tbsp cider vinegar
2 garlic cloves, chopped
1 block tempeh, cubed
1 cup spiral pasta
1/4 cup red onion, sliced
1/4 cup celery, sliced diagonally
1/2 cup red bell pepper, sliced into thin strips
1/2 cup green bell pepper, diced
1 tbsp chopped parsley
2 tbsp olive oil
1 tbsp cider vinegar
1/8 tsp oregano
1 garlic clove, crushed
1 tbsp tamari Instructions: Salad:
1. Mix together the first four ingredients.
2. Add tempeh and marinate for at least for 1 hour.
3. Heat olive oil and half the tamari in skillet.
4. Add tempeh and fry till crispy and brown on the outside.
5. Cook pasta till al dente.
6. Toss with remaining ingredients and tempeh and set aside.
