Tempeh Mock Chicken Salad Recipe

Serves 3

Ingredients:

  • 6 oz tempeh
  • 1/4 cup mayonnaise
  • 1 celery stalk, finely chopped
  • 2 tbsp dill pickle, minced
  • 2 tbsp onion, minced
  • 2 tbsp fresh parsley, minced
  • 1 tsp prepared mustard
  • 1 tsp soy sauce
  • 1 dash garlic powder


  • Instructions:

    1. Steam tempeh for 20 minutes.
    2. Allow to cool enough to handle.
    3. Cut into cubes slightly smaller than 1/2 inch.
    4. Combine with remaining ingredients and mix lightly.
    5. Serve on a bed of lettuce or as a sandwich filling.
    6. You can use tofu-based mayonnaise: just blend the tofu well with a touch of salt and pepper, lemon juice and a crushed garlic clove.
