Spinach and Shrimp Recipe

Serves 10

Ingredients:

  • 1/4 cup mayonnaise
  • 2 tbsp vegetable oil
  • 2 tbsp olive oil
  • 2 tbsp tarragon vinegar
  • 2 tbsp Dijon mustard
  • Salt and pepper to taste
  • 2 lbs fresh spinach, washed, with stems removed
  • 8 slices cooked bacon, drained and crumbled
  • 10 fresh mushrooms, thinly sliced
  • 1/2 lb tiny cooked shrimp, about 1 1/2 cups
  • 2 cups croutons


  • Instructions:

    1. In small bowl, mix mayonnaise, oils, vinegar and mustard.
    2. Season with salt and pepper.
    3. Cover and refrigerate until ready to use.
    4. Put spinach bacon, mushrooms, shrimp and croutons in large salad bowl.
    5. Add dressing and toss thoroughly.
