Italian Tuna Salad with Olives and Sun-Dried Tomatoes Recipe

Serves 2

Ingredients:

  • 1/4 cup green beans, cut into 1/2-inch pieces
  • 6 1/2 oz can tuna in olive oil
  • 1 tbsp capers, rinsed and drained
  • 1 tbsp sun-dried tomatoes in olive
  • Oil, minced
  • 1 tbsp black or green olives, minced
  • 1 scallion (use equal amounts of white and green parts), minced
  • 1 tomato, peeled, seeded and diced
  • 1 tbsp parsley or basil, chopped
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp lemon juice, freshly squeezed
  • Freshly ground black pepper
  • Salt, to taste (optional)



  • Instructions:

    1. Prepare an ice bath.
    2. Bring 2 cups water to a boil.
    3. Add a pinch of salt.
    4. Blanch the green beans for 1 minute.
    5. Drain and plunge into the ice bath.
    6. Drain and pat dry.
    7. Reserve.
    8. Drain the tuna of its oil.
    9. Place it in a bowl and flake it with a fork.
    10. Add the green beans and all the other ingredients and toss well.
    11. Season to taste with salt and pepper.
    12. Chill before serving.
    13. Serve as a salad or eat as a sandwich.
    14. For sandwich, mix a little olive oil, lemon juice, and a clove of minced garlic together and spread it on the bread, then placed the tuna mixture on top.
