Cheesy Tuna Rice Muffins Recipe
Makes 12 muffins Ingredients: 2 cups cooked rice
1 cup Cheddar cheese, shredded
6 1/2 oz white tuna in water, drained
3/4 cup black olives, sliced
1 tbsp onion flakes, dried
1 tbsp parsley, dried
1 tsp seasoned salt
2 large eggs, beaten
2 tbsp milk
Pam cooking spray
Tangy Butter Sauce:
1/4 cup butter, melted
1 tablespoon lemon juice
1/2 teaspoon seasoned salt
1/2 teaspoon parsley, dried
Instructions: 1. Pre-heat oven to 375 F.
2. Combine rice, cheese, tuna, olives, onion, parsley and seasoned salt.
3. Stir in eggs and milk, mixing thoroughly.
4. Spray muffin tin with PAM.
5. Divide the rice mixture evenly among the cups.
6. Bake at 375 F for 15 minutes or until lightly browned.
7. Meanwhile, combine the sauce ingredients.
8. Loosen muffins with a spatula and serve with sauce.
